Electronic tongue analysis data show that the perception intensity of-salt roasted sunflower seeds (sodium content ≤ 120mg/100g) in terms of umami and sweetness is 30% than that of traditional products.
The latest research points out that roasted sunflower seeds produced using microwave-assisted baking technology have 25% higher antioxidant activity (OR value) and a 40% lower acrylamide generation than traditional products, making them more in line with modern health food standards
